R. Lapid's Chicharon
We Pinoys love chicharon. What is chicharon? It is a double/triple/quadruple-fried pig skin until it reaches it's crunchy puffed-up state. R. Lapid's Chicharon is one of the most famous ones leading the market. They have many branches. One is particularly near our house so we are regular customers. Well, only when my seaman father is around because this is his favorite. I also like their vinegar. It is loaded with spices and can be hot too.
The "Laman" pack is may favorite. It has a bit of meat in it and not all skin.
Because of the meat attached to the skin, the shape tends to be curled. This is one of the pricier variations.
The less pricey variation is the cocktail. It only consists of skin. I think this is also the one with spicy/hot flavor.
As you can see, the "Cocktail" has a variety of shapes and sizes.
In the Philippines, there are other Chicharon and Barbecue establishments named with "Lapid" attached to it. The R. Lapid is the original.
My Thoughts:
* This is definitely one of the best chicharon out there.
* I love the vinegar that comes with it.
* Don't eat too much in one sitting. It is obviously very high in cholesterol, and it is not advisable for hypertensive people to consume this.
Eat chicharon moderately or occasionally.
